Summer Strawberry & Grilled Corn Salad
Fresh, colorful, and perfect for BBQs, lunches, or a light summer dinner.
Ingredients
For the salad:
5 cups mixed greens or arugula
2 ears fresh corn, grilled or roasted
1 cup strawberries, sliced
1 avocado, diced
1 cucumber, sliced
¼ small red onion, thinly sliced
½ cup crumbled feta cheese
¼ cup fresh basil, chopped
Optional: grilled chicken, shrimp, or salmon for protein
For the honey-lime dressing:
3 tablespoons olive oil
1½ tablespoons fresh lime juice
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Grill the corn until lightly charred, then cut kernels from the cob.
In a large bowl, combine greens, corn, strawberries, avocado, cucumber, red onion, feta, and basil.
In a small jar or bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper.
Drizzle dressing over the salad just before serving and toss gently.
Top with extra feta and basil for presentation.
Optional Add-Ins
Candied pecans or sliced almonds for crunch
Blueberries or peaches for extra summer flavor
Quinoa or couscous to make it more filling
Jalapeño slices for a spicy kick
